Sooo many the freshest in my mind are from book 5 since I am reading it Spoiler when someone mentions that dwarf penises supposedly have magical powers Tyrion says: "I have been telling that to young women this whole time" or something like that and I busted out laughing. Also the whole Manderly speech to Davos when he says "The North remembers" got me so pumped.

rereading the series and Spoiler in the middle of GOT when Tyrion is Catelyn's captive and they're going up the High Road towards the Eyrie, they're attacked by the clansmen and at one point Catelyn is trapped by 3 guys and Tyrion comes up and kills one, while she kills the other and the next line is: "The horseman remembered an urgent engagement elsewhere and galloped off suddenly" Made me laugh
