There’s probably a bigger gulf between good sushi and great sushi than there is between bad and great of any other food.
To add on to tegg’s gulf comment, that video is from Sushi Arai in Tokyo. He cuts the squid into the thinnest possible pieces so that it’s super tender and delicate, then folds it onto the rice so that it kind of falls into the mini crevasses of the rice. It’s hard to express how mind numbingly good the bite was

I am sometimes prone to hyperbole but it is the fucking best. Loved everything about it and will go back many times. Up there with countries like Spain and Italy for me as far as food and atmosphere, but what really sets it apart is just the complete dedication to craft no matter what they’re doing. You’ll have some of the best fried chicken you’ve ever had from a gas station just because everybody actually takes pride in doing their best
Lawson spicy fried chicken with a high ball is the best night cap that exists its uncomfortably juicy every time, it makes no sense
One time I got sushi at Wawa, miles better than Scheetz sushi, before meeting up with some friends for a beer. Dropped a piece of my rainbow roll near this micro my friends and I meet up at. Hit a kid walking a dog. His parents were half tanked and not watching their kid or dog. Surprise of the year I know. They were pretty mad. Was a few grand to fix the bumper and grill but my truck is fine now. Never did find the roll I dropped.
One morning I left my hotel, got a Lawsons egg salad sandwich, a salmon onigiri and then went across the street to a Dean and Deluca for an amazing cappuccino. Sat outside by myself and people watched. Heaven.
